Abstract

2 supplementary foods for preschool children are described; they are based on ragi, sorghum, wheat, Bengal gram flour, groundnut flour, crude sugar, hydrogenated fat, Ca salts, and a vitamin premix. Data are given for the moisture, protein ash, fat, fibre, carbohydrate, Ca, Fe and P contents, amino acid composition and protein efficiency ratio (determined in rat-feeding trials) of the 2 supplementary foods (values are given for both roasted and non-roasted samples). Protein content is approx. 16%; S-amino acids are limiting. Protein efficiency ratio is 2.0-2.3, vs. 2.5 for casein. These supplementary foods were found to be highly acceptable to preschool children; keeping quality is less than4 months at room temp.
