Abstract

Aqueous extraction of defatted mustard seed meal yielded an arabinan. Methylation analysis revealed a main chain of 1,5-linked L -arabinofuranosyl residues substituted at O-2 and/or O-3 with additional arabinose, both in furanoside and pyranoside forms.
