Abstract

Sardine oil and its 'stearin' fraction were hydrogenated at normal pressure, both on laboratory scale and bench scale. The stages of unsaturation at which the sardine oil odour was removed and the product stabilized against autoxidation were determined. It was demonstrated that crude sardine oil with about 1% free fatty acids can be hydrogenated at normal pressure. The reactor designed and constructed for this purpose produces a hydrogenated oil comparable to the hydrogenated anchovy oil of Peru.
