Abstract
A continuous process for making rice flakes (beaten rice, Avalakki, Poha) from paddy has been developed. Soaked paddy is roasted in a continuous roaster, immediately shelled in a modified centrifugal type sheller and gently polished in a cone type rice polisher. It is flaked in a heavy duty roller flaker. Several 250-kg batches were run by the continuous process and the average yield of rice flakes was about 70%, which is 6-7% higher than that obtained by the traditional process.
