Abstract

Because of the generally restricted amylolytic susceptibility of native starches to single enzyme systems, the synergistic effect of amylolytic enzymes that might enhance the digestibility of raw starches was explored. It was observed that glucoamylase-I hydrolysed native starches to a limited extent (approx. 27.5-35.6%) even after prolonged incubation of 60 h. On the other hand, pullulanase doubled the rate of raw starch digestion by glucoamylase-I. A combined glucoamylase-II and pullulanase system enhanced the digestibility of raw starches considerably. In addition, the synergistic digestibility of raw starches by human salivary alpha-amylase and pullulanase and beta-amylase and pullulanase were studied in detail.
