Abstract

A description is given of the commercial cultivation of Pleurotus sajor-caju and the effects of supplementing the straw substrate with protein sources on the yield and protein content of the fruit bodies. The protein supplements were added with the spawn, in amounts equivalent to additions of 1.1, 2.2, 3.3 and 4.4% protein on a dry wt. basis. Mushroom yield was recorded and protein content of the fruit bodies estimated by determining the N content by the microKjeldahl method and its multiplication by the factor of 4.38. Increases in yield were generally associated with a reduction in protein content of the mushrooms and the highest protein contents recorded were from relatively low yielding substrates.
