Abstract
The following information is presented in tabular form: characteristics of the essential oil from important commercial varieties of ginger (Cochin, Jamaican, Sierra Leone, Nigerian, Japanese); characteristics of oils from Cochin whole ginger and peel; essential oils from 27 different gigner varieties cultivated in India; yield and yield of oil per hectare from some important varieties of ginger; aroma characteristics of ginger oil fractions; and effect of method of drying (vacuum freeze-drying, cross flow drying, sun drying, no drying - fresh green, commercial dry ginger) on yield and quality of ginger oil.
