Abstract

The following changes were observed in insect-infested coffee samples: increases in moisture, kernel damage, frass, uric acid, microbial load, ash, N and acidity and decreases in bulk density, TS, chlorogenic acid, reducing sugars and petroleum ether extract. Caffeine content was low in damaged kernels and high in frass, with overall level remaining unchanged.
