Abstract

Effect of wax emulsion, prepared from one or more edible waxes (sugarcane, carnauba, microcrystalline) on the keeping quality of knol-kohl was studied during storage at 18-21 degree C. Treatment with 8% carnauba wax was found to be best for keeping knol-kohl in a satisfactory condition for 8-10 days, by reducing respiration rate and physiological weight loss and retaining the moisture and vitamin C contents. Control knol-kohl could be kept only for a period of 2-4 days. Of the 2 growth regulators (maleic hydrazide and naphthalene acetic acid) studied in combination with carnauba wax emulsion (8% concn.), 100 ppm of maleic hydrazide further reduced the development of crude fibre, loss in vitamin C, moisture, acidity and sugar content and thereby improved marketability.
