Abstract

The essential amino acid composition of the mushroom was determined; its protein score was found to be 57. The protein had adequate quantities of most essential amino acids but was deficient in leucine and methionine. Mushrooms were also analysed for moisture (90.4%), fat (0.25%), protein (3.90%), crude fibre (1.67%), and ash (1.10%).
