Abstract
An infant food was prepared from groundnut flour rather than protein isolate. Wheat was added to provide sufficient soluble carbohydrates, and barley malt was used to hydrolyse starch in the groundnut flour, the flour, wheat and barley malt being mashed together for 2 h at 65-70 degree C. After adjustment of pH to 9.0, milling and centrifuging, the acidified liquor (pH 6.5) was mixed with weighed quantities of dried skim-milk, hydrogenated groundnut oil, sugar and buffer salts. The mixture was spray-dried and fortified with vitamins and Fe. The infant food contained 26% protein and 18% fat. Shelf-life studies were satisfactory for up to 8 months at 45 degree C.
