Abstract

The technical problems in production of a beverage consisting of coffee solids, dried milk and sugar are discussed. A ratio of coffee powder, dried skim- or whole milk and sugar of 1:1:2 (30 g/8 oz cup) or soluble coffee, dried milk and sugar of 1:5:10 or 1:5:8 (25 g/8 oz cup) is proposed. Other recommendations include: selection of raw materials based on Indian Standard Inst. specifications; packing in l-cup units to ensure uniform proportion of ingredients; air- and moisture-tight packing in Al foil laminates and tin containers; and careful preparation of beverage. Tentative specifications given are: moisture, 2-4%; sucrose, 50-70%; milk solids, 25-40%; coffee solids, 5-10%; and caffeine, 0.14-0.28%. Nutritive value/8 oz cup is tabulated.
