Abstract

Over 75% of pulses produced in India is milled to produce dhal. This article gives a detailed account of the dhal milling industry in India with technical details of the methods available for de-husking and splitting the grain. A comparison is made between wet and dry milling methods in relation to local varietal and seasonal factors. Major deficiencies are excessive dependence on sun drying, laborious methods, inefficient and wasteful equipment, and absence of dust prevention and infestation control. Improved varieties of pulses and new processing techniques are required and could greatly increase existing yields of dhal.
