Abstract
Processing and storage of pulses in India are discussed. Aspects considered include: major types of pulses grown in India; recent production trends; status of dahl milling operations in different Indian states; traditional techniques for milling of pulses at the household and cottage industry levels; modern processing methods; examples of various small-scale dhal milling units; factors affecting pulse quality during storage; and pest control methods (including use of clay and diatomaceous earth, modified atmosphere storage and chemical methods).
