Abstract

Esterification of alpha-terpineol with acetic anhydride or propionic acid mediated by Rhizomucor miehei lipase was studied using response surface methodology in order to optimize conditions. Variables studied were enzyme/substrate (acid) ratio, alpha-terpineol concn. and incubation period. Acetic anhydride gave higher yields than propionic acid at low enzyme to substrate ratios. Yields predicted by the model for alpha-terpinyl acetate formation were in agreement with experimentally determined values.
