Abstract

Garlic bulbs var. Jamnagar were used to prepare dehydrated garlic powder, encapsulated garlic oil and stabilized garlic powder (encapsulated garlic oil-dehydrated garlic powder (23:77) with 2% tricalcium phosphate as anticaking agent).
