Abstract

Shrimps harvested from a commercial shrimp farm situated in Ankola, Uttara Kannada (Karnataka, India) were studied for shelf stability during storage in ice. Shelf life was determined by analysing chemical, bacteriological and sensory characteristics. The shrimps were acceptable for up to 11 days in their cooked form, but were unacceptable based on their raw appearance on the 9th day of storage in ice.
