Abstract

Advantages and disadvantages of methods for detoxification of aflatoxins in foods and feeds are reviewed. Aspects considered include: strategies and specific criteria for detoxification; physical detoxification methods (physical removal, heat inactivation, irradiation, removal by solvents); chemical methods (ammoniation, degradation by acids, treatment with sodium bisulphite, degradation by oxidizing agents); and microbiological methods (using Flavobacterium aurantiacum, acid-producing fungi, Lactobacillus delbrueckii, Corynebacterium rubrum, Rhizopus stolonifer, Aspergillus, Mucor, Helminthosporium sativum, Absidia repens, Trichoderma and Doctylum denroides).
