Abstract
Development of machinery for production of Indian heritage foods with more uniformity and increased production rate but without loss of the sensory characteristics of the products is discussed. Examples given include design of a chapathi making machine, continuous papad making machines, a continuous dosa making machine, a boondi laddu mixer and equipment for producing tomato puree and pulp.
