Abstract
India produces 94 MMT of wheat annually of which about 50-55 MMT is
processed to obtain atta. This makes atta one of the major products made
from the wheat, and is consumed as a staple food mainly in the form of
chapati, a flat unleavened baked product. Industrially packaged atta is
manufactured in motorized stone chakkis, which consumes more electric
power. Present study is aimed towards evaluating the effect of pre-milling of
wheat using roller mill on its grinding characteristics and quality of chakki atta
and chapatti.
