Abstract
Numerous varieties of okra (Hibi.scus esculentus) having various contents of
mucilage are available. Due to these differences, variation in the extraction procedure,
or the uncertain homogeneity of the resulting preparations, the composition
of okra mucilage has been the subject of controversy1-3. As part of our study of tbe
structur*function relationship of food carbohydrates, the structure of okra
mucilage has been investigated.
