Abstract
As part of our studies on the chemical, functional, and nutritional roIe of food
carbohydrates, various starchy and nonstarchy polysaccharides of the field-bean
(Doiic/zos /ablab, variety lignosus) endosperm and hulls have been isolated and characterized’.
Some structural features of the cold-water-soluble polysaccharides are
described in this communication.
