Abstract

This Dissertation / Report is the outcome of investigation carried out by the creator(s) / author(s) at the department/division of Central Food Technological Research Institute (CFTRI), Mysore mentioned below in this page.

Item Type: Student Project Report
Additional Information: Tree borne oilseeds are the good sources of oil and protein in general, but some selected oilseeds are rich in oil, proteins and carbohydrates. The seeds such as sal, mango kernel, jatropha, neem and karanja are the great potentials of carbohydrates. Sal seed and mango kernel possess good amount of starch, which has a tremendous nutritional significance, and have been industrialized. Since there is a gap in availability and need for available carbohydrates, the tree borne oilseeds are used for extracting carbohydrates. Presently, karanja seed has been exploited for its oil in the production of bio-diesel and the seed meal is left after oil extraction is used only as manure. The seed meal is a rich source of proteins (33%) and studies for its nutritional quality being carried out. In this context, it is interested to understand the constituents other than proteins present in the meal. The next major component is the carbohydrate, which is of interest, has been undertaken to study. It is already known that karanja seeds along with few other oil seeds are a rich source of carbohydrates. In order to cope up with the current requirement for an available carbohydrate source, studies on the carbohydrate composition of karanja seed meal has been done. Since dietary fibre plays an important role in reducing cholesterol levels in hyperlipidemic individuals and rendering other benefits in controlling diabetes and being anti-inflammatory, anti-carcinogenic, it was interested to study the composition of dietary fibre of karanja seed carbohydrates. Leguminous oilseed meals possess the soluble carbohydrate fraction containing certain flatulence causing raffinose oligo-saccharides, which are not desirable as food constituent since humans have poor digestibility but gaining interest for its health beneficial quality. Keeping this in view, studies on the carbohydrate composition, dietary fibre composition and free sugars composition of karanja seed meal is studied in order to give value addition to karanja seed.
