Abstract
The National Sugar Institute arranges lectures by eminent scientists and technologists on
subjects of interest to the sugar industry. This is the text of an extension lecture delivered at the
National Sugar Institute, Kanpur by Dr V. Subrahmanyan, Director, Central Food Technological
Research Institute, Mysore on Sept. 29, 1961 to a large gathering of staff and students of the
Institute and technologists, engineers and representatives of a number of sugar factories.
