Abstract

Rice forms the staple food of nearly half of the world's population (1). Diet and nutrition surveys conducted in several rice-eating regions have shown that the diets consumed by weaned infants and young children belonging to the low-income groups are deficient in proteins, certain vitamins and minerals (1-3). Due to the acute shortage and high cost of milk and other protective foods, the diets consumed by children consist mostly of cooked rice and rice gruel with only small quantities of legumes and vegetables (3, 4). The incidence of protein malnutrition (kwashiorkor) and other deficiency diseases is quite high especially among young children (2-4). Considerable amount of work has been carried out by several workers on the supplementary value of processed protein foods and milk substitutes prepared from oilseeds to ill-balanced diets consumed by children (5-7). In an earlier publication (8) from this laboratory, the results of studies on the nutritive value of spray-dried milk substitute from soyabean and groundnut have been reported. The present paper deals with studies on the supplementary value of spray-dried powder obtained from a 2: 1 blend of soyabean and groundnut milks to poor rice diet.
