Abstract
Cured coffee beans are stored under different climatic conditions in India. Storage of the beans under proper conditions is an important aspect of marketing of coffee. No scientific data, however, were available on the changes occurring m green coffee of various grades and varieties during storage under different climatic conditions. Storage conditions for mansDoned and lInmonsooned green coffee beans differ widely. The green coffee, especially the plantation type, is prized for its colour and appearance and systematic investigations were therefore carried out to study different aspects of the storage problem with a view to collect data on storage changes and to evolve suitable methods of storage. The present paper deals with the physical, chemical and biological changes that may occur in coffee beans during storage.
