Abstract
Welded open top sanitary (OTS) cans were tested for porosity and resistance to strip lacquer, and were evaluated for canning of potatoes in brine, tomato paste, mango juice and mango pulp. The ferricyanide and copper sulphate tests did not reveal iron exposure throughout the welded portion, and there was no peeling of lacquer when dipped in 2% citric acid solution for 30 min. The canned potatoes and tomato paste were stored at 25-30 degree C and at 37 degree C for 12 months, while the mango products were stored for 3 months. Welded cans retained good vacuum, and the quality of the products was good and acceptable, except in potatoes stored at 37 degree C which showed a slight metallic taste. Light to heavy feathering with detinning was noticed in the can interior with all the products, the extent depending on the storage period and temp.
