Abstract

Characteristics of the 4 important commercial varieties of ginger, Cochin, Jamaican, Sierra Leone and Nigerian, are compared. UK and US trade in dry ginger in 1967, analytical data for ginger varieties cultivated in India, and composition of Rio de Janeiro ginger, are given. Consideration is given to the raw material and its preparation, solvent extraction including yield of ginger oleoresin with different solvents, solvent stripping and to evaluation of the oleoresin.
