Abstract
Studies with model systems consisting of Na2S and H2S packed in cans and with canned vegetables and jam showed that S staining does not necessarily cause increased corrosion. SO2 in mango jam failed to cause any significant increase in detinning but did increase S staining. Mixed vegetables behaved in a similar way showing that increased S staining does not cause increased corrosion in tinplated cans. Increasing the acidity (pH reduced to 5.0) of vegetables rich in S containing compounds led to a slight increase in staining and detinning. Potatoes packed in tinplated cans with varying amounts of different ingredients (CaCl2, brine, citric acid) indicated that the ingredients do not significantly affect the amount of detinning. Electrolytically coated cans with small grain structure generally showed more detinning than those with large grain structure and hot dipped cans. Protecta treatment of cans (dip in a solution of teepol, NaOH, sodium orthophosphate, and potassium chromate) was shown to be a satisfactory method for preventing S staining in cans.
