Abstract

Various aspects of mushrooms are discussed including: the growth and life cycle of mushrooms, morphology and development; edibility; chemistry, nutritional and biomedicinal properties; preservation and processing techniques (refrigeration, deep freezing, pickle making, dehydration, canning and fermentation); and their role as an unconventional single cell protein for human consumption.
