Abstract
Nine different flour streams and straight run flour from a wheat flour mill were analysed for total, inorganic and phytic acid phosphorus. Highest contents of phytic acid P were found in tail end streams, 4th break, and 5th and 3rd reduction streams containing 142.6, 108.7 and 95.3 mg phytate P/100 g, resp.
