Additional Information: | Fenugreek seed contains many bioactive compounds with pharmaceutical applications. Fenugreek seeds are bitter to taste. Therefore, use of fenugreek seeds as a raw material source for a nutritional supplement presents some difficulties. Processing of fenugreek will aid in the utilization of fenugreek as food ingredient to promote health and prevent diseases. Fenugreek seeds were debittered by soaking in water and aceitic acid. The debittred seeds were thermally processed by HTST treatment. The stability of nutritive and nonnutritive bioactive compounds in the processed fenugreek seeds was determined. The results presented indicate that debittering and thermal processing did not alter the major nutrients of fenugreek seed. Slight decrease in the soluble sugar content and marginal increase in the reducing sugar content was observed in the processed fenugreek seeds. However, substantial decrease in the solubility of protein was observed the processed seeds. SDS-PAGE electrophoretic profile of proteins indicated that the intensity of major bands at molecular weights in the range of 67kDa to 45 kDa were decreased. |
