Additional Information: <p align="justify">RBO is gaining importance as an edible oil for human consumption both by its fatty acids composition and nutraceuticals like oryzanol and tocopherols present in it. In order to exploit maximum benefit of RBO, it can be enriched with essential fatty acid á -linolenic acid (ALA). Linseed oil is a rich source of ALA. This source is used for interesterification and RBO. In the present study, synthesis of structured lipids i.e; enrichment of RBO with ALA is achieved by lipase from Rhizomucor miehei. In the present study, synthesis of structured lipids i.e; enrichment of RBO with ALA is achieved by lipase from Rhizomucor miehei.</p>
