Abstract

Snack food is a convenient form of light meal of attractive taste and texture that can provide adequate nutrition as well as the joy of eating. They are eaten in between the major meals. Hence, snack foods have to be attractive such that a consumer does repeated buying. The present dissertation has been focussed on the importance of snacks, different available varieties, raw materials used and details of the manufacturing process. This portion has been elaborated with specific examples. In addition, the characteristics of snack foods including the quality attributes have been described along with discussion on recent advances in the research on snack foods. The machineries required for the production of snacks and the packaging aspects have also been elaborated to offer a clear picture of the present status of manufacture of snack foods.
