Abstract

The concept of antimicrobial packaging has received great attention because of its potential to enhance food safety. The integration of antimicrobial agents into packaging materials is aimed at killing or inhibiting the spoilage and pathogenic microorganisms that may contaminate packaged food products. This report shows the performance of a biodegradable film using curcumin nanoparticle as a primary antimicrobial agent and methylcellulose as the polymer matrix. The main objective of this research is to fabricate a biodegradable antimicrobial film using curcumin and curcumin nanoparticle. Antimicrobial food packaging acts to reduce inhibit or retard the growth of microorganisms that may be present in the packed food or packaging material itself. The films were prepared by wet casting of the aqueous solution containing methylcellulose as the main polymer, ethanol 99% v/v as solvent, and glycerol as plasticizer. Curcumin and curcumin nanoparticles were dissolved in ethanol and glycerol as plasticizer were added in the methylcellulose solutions. The solutions were poured on a glass plate covered with Teflon sheet and dry it in ambient temperature. Films prepared with various concentration of curcumin and curcumin nanoparticle (0.3%, 0.5% and 0.2%, 0.3%, 0.5% w/w) respectively. It is observed that films with curcumin nanoparticle showed decrease in mechanical properties compared to curcumin film but increase in antimicrobial properties. Films prepared with 0.2% of curcumin nanoparticle showed inhibition while films with 0.3% of curcumin showed no inhibition, which proves that curcumin nanoparticles films shows more antimicrobial property than films prepared with curcumin. Thus it is evident from the investigation that films prepared with curcumin nanoparticles prove good for food packaging application.
