Abstract

Dietary carbohydrates, especially oligosaccharides, in particular Inulooligosaccharides (IOS) are getting a lot of attention in recent years. Being prebiotic, non-cariogenic, low calorific ingredient, IOS has captured the attention of food technologists and industrialists all over the world. Recent developments in this area focus on microbial production, functional properties and application of IOS. Inulinase is the key enzyme for the microbial synthesis of IOS. The production of IOS from inulin (GFn) is by disproportionate mode, thereby forming inulobiose (F2) initially, then inulotriose (F3), followed by inulotetraose (F4) till DP 10. Microbial inulinases are derived from fungal and bacterial sources. Fungal strains especially Aspergillus sp. are known to produce extra cellular inulinases. The focus of the present investigation is on the production of inulinase by Aspergillus clavaticus through submerged fermentation. The production process is optimized at laboratory scale. Using the microbial inulinase it is determined for IOS production. Further it has been decided to explore the usage of inexpensive but inulin-rich substrates like chicory roots and agave leaves for inulinase production and optimize the process. The inulinase obtained through this process will be used further for the production of high-content IOS.
