Abstract

Palm Jaggery is a traditional Indian sweetener, known for its medicinal properties and higher source of vitamins and minerals. The study was undertaken to standardize the process of developing a palm based ready-to-serve beverage (RTS) with incorporation of palm jaggery and a few flavourants viz. lemon, mint, cardamom and ginger.
