Abstract

This Dissertation / Report is the outcome of investigation carried out by the creator(s) / author(s) at the department/division of Central Food Technological Research Institute (CFTRI), Mysore mentioned below in this page.

Item Type: Student Project Report
Additional Information: The garden cress phenolic antioxidants were extracted with different solvents i.e 70% ethanol, 70% methanol , 70% Acetone:methanol and water and total phenolic content were estimated by Folin Ciocalteau method, its antioxidant potential were analysed using three different radical generating systems . The different phenolic acids in each were separated and identified using high performance Liquid Chromatography. 70 % aqueous ethanol and methanol were found to have equal potential in extracting the phenolic components and water had the least potential. Total phenolic content in 70% aqueous methanolic extract was higher compared with other solvents , where as the water extracs were found to contain less phenolic acids. Ethanolic and methanolic extracts were found to have high DPPH radicle scavenging activity followed by acetone and water. Ethanol extract was found to be more potent in scavenging super oxide ion and had high lipid hydroperoxide and hydroxyl ion scavenging activity than the others. It was concluded that lepidium sativum seeds also have high antioxidant activity which can effectively scavenge free radical in the system.
