Abstract

This Dissertation / Report is the outcome of investigation carried out by the creator(s) / author(s) at the department/division of Central Food Technological Research Institute (CFTRI), Mysore mentioned below in this page.

Item Type: Student Project Report
Additional Information: Effect of soluble fiber on the efficacy of the results using AOAC currently prescribed method by AOAC was investigated. A starchy food material (wheat) was selected as a base material. Two experiments were conducted where in the selected gum in fine powder form were added to wheat flour at two different levels.(2%5.8%). Gum Ghatti exhibited values closer to that of expected when the gum was added at the 2% level. However with an increase in the addition of Gum ghatti the values decreased to 54%, nearly 50% drop in the efficiency of the analysis and recovery of the gum. Guar gum although could be analyzed with higher efficiency but yet there was a 10% decrease in the values It was clear from the observations that the method of analysis for ISDF is sensitive to the presence of SDF. Method for ISDF analysis have lower specificity & requires modification as to improve the results for ISDF. Since three of the gums used in the present study. i.e., Xanthan, tara and tragacanth gum exhibited more or less a similar profile of efficiency of the method. Gums guar and ghatti exhibited a small difference at which the estimated values are closer to the expected values i.e. 5.8 %. the type of SDF may also have an influence on efficiency on estimation of ISDF.
