Additional Information: | <p align="justify">One of the high growth areas in fermentation technology is search for new bioactive molecule from microbial sources. Besides antibiotics, some of the bioactive molecules includes mammalian enzyme inhibitors, metabolites produced by fermentation or molecular weight enzyme inhibitors. Lipoxygenase is a metalloid enzyme, which is responsible for off flavors in food materials and is also called as free radicals formers. Inhibitors against this enzyme can be used as effective antioxidants in food sectors and as a therapeutic agent in health sector. Investigation at CFTRI, Mysore to screen for LOX inhibitors from fungal sources revealed that sclerotiorin produced from Pencillum frequentans CFTRI A 24 has shown potent inhibition of lipoxygenase. It also shows potent antioxidant activity discussed in current work.</p> |
