Additional Information: <p align="justify">Microbial Exopolysaccharides are biothickeners that can be added to a wide variety of food products, were they serve as viscosifying stabilizing, emulsifying, or gelling agents. Numerous exopolysaccharides with different composition, size, and structure are synthesized by Lactic Acid Bacteria (LAB), which are Generally Recognized As Safe (GRAS) microorganisms. The heteropolysaccharides from both mesophilic and thermophilic LAB have received renewed interests recently. The isolation of suitable EPS producing culture and optimization of cultural conditions for the maximum EPS production and also on the partial characterization of the polymer was studied. The culture was isolated from curd samples and identified to be Lactobacillus sp. The optimization studies were conducted in batch fermentation in shake flasks and was noted that EPS production was found to be maximum when culture was grown in suitable synthetic medium (EPS medium) rather than complex MRS broth.</p>
