Abstract
The relative stability of artificial sweeteners, saccharin, aspartame,acesulfame-K and sucralose in carbonated cola and orange beverages was studied, using beverage samples spiked separately with each sweetener at different concentrations and stored at room temperature in the dark and under normal light conditions. A simple and easy sample clean-up procedure using acidic alumina was standardised. The analyses were carried out at three months intervals over a period of one year using a modified liquid chromatographic method. The same method was standardized to determine simultaneously saccharin, aspartame, acesulfame-K, sod.benzoate and caffeine in a single run. The validation of the method was also carried out for each additive.The results showed that sucralose is the most stable artificial sweetener whereas aspartame degraded up to a maximum extent of 85%.
