Abstract

The present work relates to air drying of tropical paddy-straw mushroom (Volvariella volvaeea) which can be extensively cultivated in tropical regions and is already fast gaining popularity in Kerala. It is now grown commercially in Kerala. At times, entire crop of V. volvaeea cannot be sold as fresh. Hence the need for its preservation by dehydration for latter use in the manufacture of soups, or curried products, etc. The present work relates to the standardisation of the conditions of dehydration of surplus paddy-straw mushroom using a cross-flow drier.
