Abstract

ABSTRACT: This study aimed to evaluate the effect of the spray drying method on the anthocyanin encapsulation from inedible waste of onions. The spraying conditions for microencapsulation were optimized using the Box−Behnken design with factors such as maltodextrin (MD %), inlet temperature, and the ratio between MD and anthocyanin extract. The maximum yield of 89.64% ± 0.01, 0.023 ± 0.00 mg/mL, and 0.82 μm ± 0.11 of anthocyanin encapsulation efficiency, antioxidant activity, and particle size was achieved by 5% MD concentration at ∼130−150 °C. The encapsulated anthocyanin powder (EAP) was evaluated for morphological tests such as scanning electron microscopy, particle distribution, Fourier transform infrared analysis, and physicochemical tests like moisture content, solubility, density, and differential scanning calorimetry. Electronic sensing devices, E-nose and E-tongue, confirmed the aroma and taste profiles of EAP. Finally, 60-day storage study was conducted to obtain information on the stability of EAP for different temperatures and light conditions.
