Abstract

Limiting amino acids in horse gram were determined from measurement of plasma amino acid (PAA) scores and ratios after feeding cooked whole horse gram to weanling rats. Effect of amino acid supplementation on the PER of whole and dehusked gram was investigated. Results showed that methionine was the major limiting amino acid in horse gram protein as judged by PAA scores and growth response of weanling rats. Threonine and tryptophan were the other minor limiting amino acids. The PER of whole and dehusked horsegram improved from 1.3 to 2.3 and 1.4 to 2.8 resp. on supplementation with methionine. Dehusking reduced the cooking time significantly from 90 to 30 min.
