Abstract

Canned strained carrot baby food (CBF) and canned strained green pea baby food (PBF) were evaluated for certain physicochemical and sensory parameters during storage for 180 days at (i) normal (27 degree C and 65% RH) storage and (ii) accelerated (38 degree C and 92% RH) conditions. Both baby foods kept well for 180 days at (i), but they could be stored without much change for only up to 135 days under (ii). Changes in moisture, acidity and non-enzymic browning were negligible. Loss of ascorbic acid was gradual at (i) and was sudden and rapid (82 and 60%) at (ii). Conditions of storage and duration did not affect total carotene or beta-carotene. Chlorophyll in PBF decreased irrespective of storage condition and its duration (58-41%). Conditions of storage affected sensory quality parameters including colour and appearance, aroma, taste and overall quality of the baby foods, but the changes were slight at (i) compared to (ii). Period of storage also influenced these changes.
