Abstract

Banana inflorescence (flower and bract) of Musa spp. Grand naine was evaluated for soluble (SDF) and insoluble dietary fiber (IDF). The dietary fibers were heteropolysaccharides with major sugar as galactose in SDFs and xylose in IDFs. Among the samples, flower SDF possessed higher water holding (8.54 g/g), swelling (8.13 mL/g), emulsifying (53.89 %), and higher adsorption capacities for cholesterol (19.27 mg/g), sodium cholate (8.47 mg/g), and glucose. SDFs displayed better glucose and bile acid dialysis retardations. Nitrite ion adsorption and cation exchange capacity were superior for flower IDF. The significantly higher antioxidant potential of FIDF may be attributed to high polyphenol (74.23 mg GAE/g) and flavonoid content (21.00 mg QE/g). Structural analysis was conducted using FTIR, SEM and XRD. These characteristics indicated that banana inflorescence could find application as an ingredient in functional food products as texturiser, and thickener and also for maintaining healthy glucose and blood lipid levels.
