Abstract

Storage quality of groundnut oil, packed in used tin containers, has been studied over a period of 13 months and compared with that of the oil packed in fresh tin containers. The data on the profiles of free fatty acids, peroxide value, Kries test and sensory evaluation indicated that the fresh tin containers were safe for long storage of 12 months at 37CC, in contrast to the short shelf-life of 3-4 months at 37°C in case of used tin containers.
