Abstract
Much attention has been directed towards the production of chitin and modified chitosans with tailored physicochemical, and hence functional, properties. However, only a limited range of analytical techniques are used to characterize these polymers. The utility of DSC was examined for the analysis of chitin and for assessing the chemical and physical changes in modified chitins and chitosans. Shrimp shell chitin was used to prepare a range of different chitins and chitosans with varying degrees of deacetylation, mol. wt., solubilities, and levels of carboxymethyl substituents. DSC thermograms contained endo- and exotherms corresponding to water evaporation and polymer decomposition, respectively. The enthalpy values observed in thermograms increased with increasing amino and carboxymethyl contents, and decomposition peak temp. and areas were also influenced by polymer mol. wt., and acetyl and carboxymethyl contents. It is concluded that DSC is an effective technique for evaluating deacetylation and carboxymethylation of chitin and chitosans.
