Abstract

Work done in India on oils and fats over 3 decades is reviewed, with special reference to innovative approaches or novel products. Aspects dealt with include oilseed processing with emphasis on groundnut; search for new oil-bearing materials; studies on by-products; commercialization of oil extraction processing technology including the viability of units; use of Indian oils for speciality purposes; and basic research done on oils and fats at universities and research institutes in India.
